Italian Wedding Cookies, also known as Snowball Cookies, are one of my all time favorite Italian cookies. Ok, it’s so hard to choose just one but this is one I could eat all year round.
Things to know when making Italian Wedding Cookies:
- You can use any nut you prefer but my preferred nut is the pecan. That being said they are great with walnuts and almonds too!
- The “dough” will look nothing like dough. It is dry and crumbly and will seem like you messed something up. You didn’t. Just trust the process.
- When “rolling” the cookies it is less of a “roll” and more of a squish and smash shaping technique.
- These are fun to make small for little bite sized versions.

Italian Wedding Cookies (Snowball Cookies)

1 c butter, softened
1/2 c powdered sugar
2 1/4 c flour
1/4 tsp salt
1 tsp vanilla
3/4 c chopped walnuts or preferred nut
1/2 c-3/4 c powdered sugar, for rolling
Directions
- Cream butter and sugar together.
- Add the vanilla and mix.
- Add the flour and salt and stir with a fork, it will seem crumbly.
- Stir in the chopped nuts.
- Chill in the refrigerator for 1 hour.
- Preheat the oven to 350 degrees.
- Form into 1″ balls and place on a lightly greased cookie sheet or parchment paper.
- Bake for 14-17 minutes.
- Place cookies on a cooling rack.
- Once cooled, roll in powdered sugar.
