Jalapeno Bean Dip

If you are looking for the perfect spicy bean dip, look no further! This delicious Jalapeno Bean Dip is the perfect addition to any game day table. With the super bowl just around the corner, you can’t go wrong with this dip. We love it for game days but literally any day is a good day to eat it!

Of course it can be eaten the traditional way as a dip but we have used the leftover overs in a variety of ways including:

  • Nachos- place the bean dip on the chips then add whatever toppings you like! Guacamole, sour cream, tomato, olives, cilantro, onion, etc.
  • Quesadillas- add meat or just use the beans and make quesadillas. Again add toppings for serving.
  • Burritos- just a simple burrito with or without meat and whatever additions you prefer.
  • Tostada-this dip is delicious on a baked corn tortilla and topped with meat and all the toppings.

And for those of you who don’t love spicy but love a good bean dip, this recipe is simple to adjust! Here’s what you do.

  1. Switch the jalapeno cheese for a Mexican blend shredded cheese.
  2. Omit the jalapenos in and on the dip.
  3. Omit the green chili seasoning and do 3 Tbsp taco seasoning instead.

That’s it! So easy, so delicious! Enjoy!

Jalapeno Bean Dip

Course: Appetizers, Sides

Ingredients

  • 16 oz refried beans

  • 10 oz diced tomatoes and green chilis, drained

  • 3/4 c sour cream

  • 1/4 c chopped jalapenos (fresh or jarred)

  • 2 Tbsp green chili seasoning (We get ours at Trader Joes)

  • 1 Tbsp taco seasoning

  • Dash of salt and pepper

  • 2 c jalapeno or pepper jack cheese, divided

  • 1/4 c sliced jalapenos

  • Optional Toppings:
  • Jalapeno

  • Cilantro

  • Green onion

  • Avocado

  • Tomato

  • Olives

Directions

  • Preheat the oven to 375 degrees.
  • In a bowl combine all ingredients except 1 cup of cheese and sliced jalapenos. Mix well.
  • Transfer to a round pie dish and top with remaining cheese and sliced jalapenos.
  • Bake for 20 minutes. After 20 minutes turn the oven to broil and broil for 2-3 minutes.
  • Remove from the oven and top with desired toppings. Serve with tortilla chips.

Notes

  • For a less spicy version: omit the jalapenos, switch the cheese to Mexican cheese, and replace the green chili seasoning with more taco seasoning.
