Almond Cherry Cookies

Nothing says I love you like sweets for your sweethearts (see what I did there).
These cookies are divine. The almond and Italian black cherries are a match made in heaven 🥰

BONUS: The cookie dough is gluten free and refined sugar free (you would never know)!!!

Almond Cherry Cookies

Ingredients

  • Dough
  • 1 egg white whipped until soft peak form

  • 1 stick butter room temp

  • 2 1/2 c almond flour

  • 1/3 c maple syrup

  • 1/4 tsp salt

  • 1/2 tsp vanilla

  • 1/2 tsp almond extract

  • Filling
  • Italian black cherries or maraschino cherries

  • Frosting
  • 1 c powdered sugar

  • 2 Tbl cherry juice

  • 1/2 tsp almond extract

  • 1 Tbl milk

  • Sprinkles (optional)

Directions

  • Mix all dough ingredients until combined. The dough will be sticky.
  • Shape into walnut size balls then put an indent in the middle with your thumb.
  • Place a cherry in the thumbprint of each cookie.
  • Bake 350 for 10-12 minutes.
  • Let cool for 5-10 min on the cookie sheet before moving to a cooling rack. Cool completely before frosting.
  • Frosting
  • Mix all ingredients in a small bowl. Drizzle over cookies and top with sprinkles if desired.
