Lasagna

Lasagna, an Italian classic that is appropriate for all occasions. It feeds a crowd and is one of the ultimate Italian comfort foods. This is Mamma Silvana’s recipe she has been making since she was a teenager. I have never had a better lasagna than my mamma’s.

Ingredients

  • 4-5 c tomato sauce

  • 1 box lasagna pasta

  • 1 lb ricotta

  • 1 egg

  • 2 Tbl dry parsley

  • 2/3 c Parmesan, divided

  • 1-2 c mozzarella

Directions

  • Preheat oven to 350 degrees.
  • Cook lasagna al dente separating noodles frequently as they cook.
  • Drain and run under cold water until cooled.
  • Shake excess water from noodles and set aside.
  • In a small bowl mix ricotta, egg, 1/3 c Parmesan, 1/3 c mozzarella, and parsley.
  • In a 9×13 baking dish, layer: thin coating of sauce, lasagna, sauce, 2-3 Tbl Parmesan, lasagna, sauce, all of the ricotta mix, lasagna, sauce, 2-3 Tbl Parmesan, lasagna, sauce, mozzarella.
  • Cover and bake 30 minute.
  • Remove cover and bake an additional 5-10 minutes.
