Ricotta Cookies

Ricotta Cookies are my husband’s favorite Christmas cookie! They are soft and melt in your mouth! As always we prefer homemade ricotta but you can totally make this with store-bought and they will be delish!

Ingredients

  • COOKIES
  • 1 stick butter, softened

  • 3/4 c sugar

  • 1 eggs

  • 1 c ricotta cheese

  • 1 Tbl vanilla extract

  • 2 c flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • FROSTING
  • 2 Tbsp milk

  • 1 1/4 c powdered sugar

  • 1 tsp almond extract

  • Sprinkles

Directions

  • Preheat oven to 350.
  • In a medium bowl, cream the butter and sugar.
  • Add the eggs, ricotta, and vanilla and stir until combined.
  • In a separate bowl, combine the flour, baking powder, and baking soda.
  • Add the flour mixture to the ricotta mixture and mix well.
  • Roll or scoop the dough into teaspoon sized balls and place on an ungreased cookie sheet.
  • Bake 8-10 minutes.
  • Allow cookies to cool on the baking sheet for 2-3 minutes before transferring to a wire rack.
  • In a medium bowl combine the powdered sugar, almond extract, and enough milk to make a smooth glaze.
  • Dip the tops of the cookies into the glaze and top with sprinkles.
