Ricotta Cookies are my husband’s favorite Christmas cookie! They are soft and melt in your mouth! As always we prefer homemade ricotta but you can totally make this with store-bought and they will be delish!
Ricotta Cookies

- COOKIES
1 stick butter, softened
3/4 c sugar
1 eggs
1 c ricotta cheese
1 Tbl vanilla extract
2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
- FROSTING
2 Tbsp milk
1 1/4 c powdered sugar
1 tsp almond extract
Sprinkles
Directions
- Preheat oven to 350.
- In a medium bowl, cream the butter and sugar.
- Add the eggs, ricotta, and vanilla and stir until combined.
- In a separate bowl, combine the flour, baking powder, and baking soda.
- Add the flour mixture to the ricotta mixture and mix well.
- Roll or scoop the dough into teaspoon sized balls and place on an ungreased cookie sheet.
- Bake 8-10 minutes.
- Allow cookies to cool on the baking sheet for 2-3 minutes before transferring to a wire rack.
- In a medium bowl combine the powdered sugar, almond extract, and enough milk to make a smooth glaze.
- Dip the tops of the cookies into the glaze and top with sprinkles.
