Nonna’s Fluffy Pancakes/Waffles 🥞

Is there anything better than going to Nonna’s house and waking up to the smell of homemade pancakes? My mom never uses a mix. She always makes pancakes and waffles from scratch using the same recipe…that’s in her head. I wrote it down when I was 9 and now my 9 year old is learning to make them herself.

Even simple recipes can carry memories through generations. Don’t sleep on the simple ones, they are some of our favorites!

Mamma Lunch(able) Diaries:

Lunchables were something we rarely if ever got for lunch but I was envious of those who did.

Now as an adult I make my own “lunchables” but with out the cheap meat and waxy cheese. I have been eating this simple combination for weeks and can’t seem to get enough.

Mamma Lunchables:
🌟Brie (warmed)
🌟Crackers of choice (I prefer La Panzanella or Rustic Bakery)
🌟Date syrup, fig spread, or honey
🌟 Meat of choice (I prefer prosciutto or pepper salami)

Spread the Brie on a cracker, drizzle with syrup, top with meat 🤌🏼

I add some veggies on the side, @micosmicrofarm peas are my favorite to eat straight! They taste like snap peas!

Mamma’s Lunch Diaries:

Why is lunch the hardest meal of the day? I know I’m not the only mamma out there who finds themselves eating sandwich crusts and the last 3 bites of Mac n cheese for lunch 🫣

Though I find myself doing this more than I’d like to admit I’ve also set out to do better! So we are starting this little lunch series. We will share some fast, easy and healthy lunch ideas for the busy Mamma.

First up is a salad inspired by my mammas orange salad that she used to make my Nonna after work each night.

Mamma Silvana’s Orange Salad (Salad)
🌱Greens of choice (I prefer microgreens from @micosmicrofarm but spinach or arugula would be great too)
🍊 Oranges cut in pieces
🧅 Red Onion, finely diced
🧂 Salt & Pepper
🫒 Olive oil

Places greens in a bowl and top with orange slices. Squeeze 2 orange slices over the top.
Season with a dashes of salt and pepper and drizzle with olive oil.
You can also add chicken and/or quinoa to make it more satiating but don’t tell @mammasil 😜

“Mom, can I sit at his feet?”

All of these pictures were unposed.

Her natural behavior as she sat at Jesus’s feet.

It was so humbling and brought tears to my eyes as I watched her gently trace the prints in his feet.

What would it be like? To sit at His feet and wonder at a love so deep to endure such agony.

But she wasn’t sad.

She smiled and was peaceful and in awe. When she finished she told me she loved Jesus … and was ready to leave.

I hope to be more like her. To feel the peace and joy that this beautiful Easter brings.

He loves me. He loves you. He lives!
